Les noisettes de marcassin sur toast , voici une superbe recette de gibier des Ardennes belges !

Ingrédients des noisettes de marcassin

  • 4 petites noix de Marcassins (env. 100 gr la pièce)
  • 4 morceaux de pain épais à toaste
  • 250 gr de champignons de Paris
  • persil
  • 2 échalotes
  • 50 gr de beurre
  • 10 cl  de crème fraîche
  • 3cl de  cidre
  • 1/4 de citron

Préparations :

  • Nettoyer les champignons, garder les 4 plus belles têtes. Les cuire 10 bonnes minutes dans 100 gr de beurre avec les échalotes hachées et le jus     du citron.
  • Faire cuire les noisettes bien rosées, 3-5 minutes de chaque face en fonction de l’épaisseur de     la tranche
  • Dorer les toasts dans 100 gr de beurre.
  • Répartir les champignons sur les toasts, déposer les noisettes et ajouter une tête de     champignons     préalablement cuite à l’eau bouillante ( 4-5 minutes) puis poêlée au     beurre.
  • Déglacer le plat de cuisson avec le cidre, ajouter la crème  et faire réduire.
  • Ajuster l’assaisonnement.
  • Napper les assiettes de sauce, disposez-y deux toasts aux noisettes de marcassins
  • Servir tout de suite.
