Ingrédients pour 4 personnes :

  • 4 truites
  • 50 g de beurre
  • 1 verre de vermouth blanc
  • 2 oufs
  • 1 dl de crème fraîche
  • 125 g de gruyère
  • sel, poivre.

Préparation de la truite auvergnate :

  1. Déposer les truites dans un plat allant au four.
  2. Poser un morceau de beurre, sel, poivre, un verre de vermouth blanc.
  3. Faire chauffer au four
  4. Dès que le poisson est bien chaud, faire un coulis avec de la crème fraîche et deux jaunes d’oufs
  5. Au dernier moment parsemez de gruyère râpé.
  6. Faire dorer au four et servir chaud.
