Une superbe recette de volaille issue du Brabant belge: le Coq à la Brabançonne


  • 1 coq
  • 50g de beurre
  • 3 oignons
  • Lard coupé en dés
  • Genièvre
  • 1 bouteille de Bourgogne rouge
  • un bouquet garni
  • bouillon
  • champignons
  • farine
  • croûtons

 Préparation du coq à la brabançonne

  1. Faire revenir, dans une casserole en fonte, une grosse noix de beurre, oignons et des gros dés de lard de poitrine, puis ajouter les morceaux de coq.
  2. Après une bonne coloration du tout, arroser de genièvre et faire flamber.
  3. Puis mouiller le tout avec une bonne bouteille de bourgogne rouge, ajouter un bouquet garni, un peu de bouillon et quelques champignons.
  4. Laisser cuire pendant une heure à feu doux.
  5. Retirer les morceaux de la casserole, finir la sauce avec un peu de farine délayée dans du beurre fondu. Servir dans un plat creux et garnir avec quelques croutons frits.
