Recette de la bûche foret noire

Une bonne bûche forêt noire et épousez l’esprit de noel


  • 4 oeufs
  • 100g de sucre
  • 30g de farine
  • 25g de cacao amer
  • 150g de lait
  • 40g de sucre
  • 1 jaune d’oeuf
  • 15g de Maïzena
  • 100g de chocolat noir (Guanaja)
  • 175g de crème entière
  • 150g de crème entière
  • 20g de sucre
  • Griottine + jus

Préparation de la bûche forêt noire

Pour la génoise, préchauffer le four à 210°C. Battre 2 oeufs avec le sucre pendant 5 minutes. Y verser la farine et le cacao tamisés. Mélanger. Battre les 2 blancs puis les ajouter. Verser la préparation sur un Flexipat et cuire 7 minutes. Laisser refroidir.

Pour la mousse au chocolat, chauffer le lait et 20 g de sucre. Battre le jaune et 20 g de sucre puis la Maïzena. Délayer avec le lait chaud, puis remettre sur le feu pendant environ 2 minutes jusqu’à obtenir une pâte épaissie. Incorporer le chocolat et mélanger. Ajouter le film alimentaire et laisser refroidir à température ambiante. Monter la crème en chantilly, puis l’incorporer à la crème au chocolat refroidie.

Découper la génoise à sa taille, l’imbibée au pinceau de jus des Griottines puis la déposer à l’intérieur. Recouvrir de 3/4 de mousse au chocolat, de griottines puis d’un petit rectangle de génoise imbibée. Recouvrir de chantilly, puis fermer du dernier morceau de génoise imbibé. Laisser au frais pendant 1 heure 30.
