The onion soupe from Alost - traditional recipe of Belgium

The area of Alost is famous for its cultures of onions. The onion soup is a classic recipe there. It has become throughout Belgium a great recipe traditionally cooked at the end of the New Year's Eve, after a long partying night !

Ingredients :

  • 5 onions
  • 4 potatoes
  • 2 garlic cloves
  • 1 l of water
  • Salt and pepper

Preparation of the onion soup :

  1. Peel the onions, potatoes and the garlic
  2. Cut all of them in small pieces
  3. Take a pan, add your vegetables, your potatoes and the garlic, the water and some salt.
  4. Bring to the boil until the vegetables and potatoes are cooked.
  5. Mix everything (with a mixer)
  6. Salt and pepper to your taste.

Serve this soup in bowls and offer to your guest on the side small pieces of butter-fried bread on which you rubbed some garlic before or not. Also leave some gratted Belgian cheese at their disposal. This soup will be delicous !
